The method shown here works well for flat pieces and chains that cannot be easily propped up. The shooting surface is Color-Aid gradient paper (sold at art supply stores). The camera is above the work like a copy stand. Another variation of this is to lay the jewelry on a piece of frosted glass that's raised up above the gradient paper. This give the piece the illusion of floating. Here's another great (and simple) setup by a master jeweler:
